Peel and dice the pumpkin.
Place the pumpkin cubes in a blender. Add water (or coconut water) and blend until smooth.
Add honey or maple syrup if desired.
Add cinnamon or lemon juice for extra flavor if preferred.
Strain through a fine-mesh strainer or cheesecloth if a smoother texture is desired.
Pour into a glass and serve chilled.
2. Pumpkin, Apple, and Carrot Juice
Ingredients:
1 cup pumpkin (peeled and diced)
2 medium apples (peeled and cored)
2 medium carrots (peeled)
1 tablespoon fresh lemon juice
1–2 teaspoons honey (optional)
Water as needed for blending
Instructions:
Peel and chop the pumpkin, apples, and carrots.
Add all ingredients to a blender with a small amount of water. Blend until smooth.
Add honey if additional sweetness is desired.
Strain for a smoother texture if preferred.
Serve chilled or with ice.
