Step 1: Take out the pits
Remove the seeds from fresh or dried dates. Rinse them well to get rid of any sticky residue.
Step 2: Dry them completely
Spread the seeds on a clean surface or tray and let them dry naturally for 1–2 days. You can also speed up the process by placing them in the oven at low heat for a short time.
Step 3: Roast the seeds
Once dry, roast the seeds in a pan over medium heat or in the oven at 180°C (350°F). Stir occasionally until they turn a deep brown and give off a nutty, coffee-like aroma. This usually takes about 30–45 minutes.
Step 4: Cool and grind
After roasting, let them cool completely. Then grind them using a spice grinder, food processor, or high-powered blender until you get a fine powder.
